From early fall to the last bitter days before you know spring is on its way, this recipe is a staple for me. I change up the original a little bit in a way that I think would make it a great one-pot dish for Thanksgiving. It calls for saffron, but for a more convenient and affordable dish, I skip it and up the Italian seasonings, like oregano and basil. A quality Italian blend works perfectly, and I sometimes add a bit of paprika and turmeric for color and complexity. Your seasoning gets mixed in with your broth, so it’s easy to taste and adjust. Lasagna for Thanksgiving? You bet! With squash and sweet potato, it gives the classic Italian dish a fall-harvest twist for a satisfying main course. Sweet Potato and Kale Frittata with Goat Cheese

You’ve gotta try this frittata! My boyfriend, while vegetarian like me, isn’t typically a big fan of quiche or frittata. But this recipe easily made it onto his “make again” list. Sweet potato gives just the right amount of sweetness. Flavor in the eggs comes from Dijon mustard and a touch of apple cider vinegar, but I also added some thyme. And while the recipe calls for kale, other dark leafy greens work. I made mine with Swiss chard since I had some on hand. A nice sprinkling of crumbled goat cheese on top adds the perfect savory tang.

If you don’t have a nonstick, oven-proof skillet like the recipe recommends, you can cook up the veggies in any pan, then put them into a pie dish and pour the uncooked eggs on stop. Just be sure to use cooking spray, and you’ll have to increase the baking time.
