Try Making These Nutritious Vegetable Spring Roll Recipes

Vegetable spring rolls are healthy and delicious. They make a great snack, appetizer, or can even be eaten as a full meal! More than that, they can be enjoyed year-round. But what better time to cook some up than in spring?

Spring rolls have a long history across many Asian cultures, with regions changing the recipe to suit their agriculture and tastes. Spring rolls became named as such because they were often made and consumed during the Spring Festival

How spring rolls are made today hasn’t changed much. Start with a thin pancake-like casing and wrap it around meats, vegetables, or a combination of both. You can fry them or eat them raw. 

When it comes to vegetable spring rolls, the variations are endless (and endlessly delicious). So this spring, try making these flavorful and nutritious vegetable spring roll recipes.

Basics of Making Vegetable Spring Rolls

Instructions

These can vary, but in general, follow the below instructions when making your spring rolls. From there, you can customize to your delight.

  1. Lightly moisten the surface of a cutting board.
  2. For each spring roll, first, dip a rice paper wrapper in your bowl of warm water until thoroughly moistened.
  3. Transfer rice paper to your wet cutting board.
  4. Place a lettuce leaf on top of the rice paper.
  5. Layer your vegetables (along with herbs or garnishes) on top, leaving about ½” -1″ space at the lettuce leaf’s bottom.
  6. Start from the bottom of the wrapper and roll towards the middle.
  7. Fold the left and right sides of the wrapper in towards the center, and then finish rolling up to the top.
  8. Serve with your preferred dipping sauce, and enjoy! 

Spring Roll Filling

Now that you know how to make spring rolls, here are a few recipes you can try. For all of these, follow the rolling instructions above.

Ingredients

  • 12 rice paper wrappers (22 cm).
  • Bowl of warm water (use a wide bowl).
  • 12 lettuce leaves (butter lettuce is best).
  • 1 red bell pepper, seeded and sliced thin.
  • 2 carrots, peeled and julienned.
  • ½ English cucumber, thinly sliced.
  • ¼ head of red cabbage, sliced.
  • Fresh mint leaves.
  • Fresh basil leaves.
  • (We recommend using the peanut sauce below to complement this recipe).

Rainbow Vegetable Spring Rolls Recipe

This vegetable combination is as good to look at as it is to eat!

Ingredients

Slice all vegetables thinly.

  • 1 medium red bell pepper.
  • 1 medium yellow red bell pepper.
  • 1 large carrot.
  • ¼ head small purple cabbage.
  • 1 medium avocado.
  • 1 cup arugula.

Vietnamese Spring Rolls

Slice all vegetables thinly.

  • ⅔ cup carrots.
  • ⅔ cup cucumber.
  • ⅔ cup red bell pepper.
  • 1 bunch fresh cilantro.
  • 1 bunch fresh mint.

For an extra fresh kick, sprinkle the vegetables with lime juice before rolling! And for an even heartier meal, fry up some tofu with your vegetables.

Dipping Sauces

Take any vegetable spring roll to the next level with a dipping sauce.

Basic Sauce

  • ⅓ cup soy sauce.
  • 1 tablespoon rice vinegar.
  • ¼ teaspoon sesame oil.
  • 2 teaspoons honey.
  • 2 teaspoons chili oil.
  • ½ teaspoon finely grated ginger (fresh if possible).
  • Mix in a bowl and serve.

Spicy Peanut Sauce

  • ¾ cup coconut milk.
  • 2 tablespoon red curry paste.
  • ⅓ cup natural peanut butter.
  • 1 teaspoon soy sauce.
  • 1 tablespoon apple cider vinegar.
  • ¼ cup packed brown sugar.
  • ¼ cup water.

This one takes a little more work, so follow the below instructions to make this sauce. 

  1. Shake can of coconut milk well.
  2. Add all ingredients, minus the water, to a small pot. Cook over medium heat.
  3. Stir while cooking until sugar is completely dissolved and the sauce is heated evenly throughout.
  4. Taste and adjust seasonings – particularly red curry paste – to your preference.
  5. Add water (if preferred) to get the sauce to your desired consistency.
  6. Dip and enjoy!
