Summertime is strawberry season. And it really is the perfect healthy food for this time of year.
You may notice this fruit is more affordable at your local grocery store, and so you’ve stocked up. Or perhaps you went picking in a strawberry field and have more than you know what to do with.
You’ve got to do something with that fruit before it goes to waste! Maybe you make shortcake, pies, jams and other goodies. But we decided to bring you some strawberry recipe ideas you may not have thought of on your own.
Eating a fresh strawberry is like biting into a summer day. The strawberry is not only one of nature’s sweetest treats, it’s also full of health benefits.
While there have only been a few studies on the precise effects of adding strawberries to your diet, it’s clear that the nutrients they contain can do your body a lot of good.
For one thing, a serving of strawberries has more Vitamin C than an orange. They provide a good source of manganese. as well as other minerals in smaller amounts. Plus, strawberries are packed with antioxidants and dietary fiber, too. They could help reduce inflammation, help you avoid heart disease and high blood pressure, and may even help your immune system prevent cancer.
So let’s start making some food with strawberries!
1. Strawberry Balsamic Vinaigrette Dressing
Strawberries go great in summer salads. And a strawberry vinaigrette is an excellent way to top it all off.
You’ll find many healthy salad ideas using strawberries online. One we really like is the Strawberry, Cashew & Apricot Salad from the site Foodie Loves Fitness. In that post, blogger Nicole also shows us how to make a homemade vinaigrette.
Her salad dressing recipe calls for a cup of strawberries, fresh basil, white balsamic vinegar, olive oil, cane sugar and sea salt. It all gets blended in a food processor and there you have it!
From her photo, the dressing looks a bit on the thick and chunky side. You could strain out some of the pulp so you just have strawberry juice. But then you’d be missing out on the dietary fiber.

2. Strawberry Basil Pizza
I did not realize that strawberry and basil are two flavors that go well together. But you’ll see them paired up in many strawberry recipes – including this one from Cookie and Kate.
Strawberry slices take the place of pepperoni on this fun pie. It’s not really a dessert pizza though. There’s no frosting or sweet crust. Kate uses pre-made pizza dough, but in this case – no pizza sauce. For cheese, Kate uses both mozzarella and goat cheese (or feta if you would rather).
Besides the strawberry slices, this pizza gets topped with fresh strips of basil leaf and is drizzled with a balsamic reduction as a finishing touch.
If strawberry on a pizza seems weird to you, Kate points out that, technically, tomatoes are a fruit too.

3. Homemade Strawberry Fruit Roll-ups
Strawberry fruit leather is just like the Fruit Roll-ups in the grocery store, except this recipe only has two ingredients, while the store-bought version includes corn syrup, hydrogenated oil, preservatives and artificial colors.
Turns out, you don’t really need any of that junk! Paleo Grubs has a recipe that only calls for strawberries and honey. That’s it!
First you’ll cook the strawberries down in a saucepan on low heat. Then add the honey. After that you’ll take the mixture and puree it so it’s as smooth as possible. Finally, spread it out thinly and bake at 170-degrees or as low as your oven will go.
Blogger Rebecca Bohl highly recommends using a Silpat baking sheet to make the dehydrated fruit easy to remove once it’s done baking. If you don’t have that, parchment paper should work too.

4. Roasted Strawberries with Black Pepper
Here’s another flavor that I was surprised to hear tastes good with strawberry…black pepper. Putting pepper on strawberries sounds pretty strange.
I have yet to try this myself, but definitely will. Apparently, the pepper enhances the flavor of the strawberries and also gives you an aftertaste of peppery kick.
Foodie blogger, Kiersten Frase of Oh My Veggies, tried a recipe for roasted strawberries with black pepper she found on Epicurious.com. At first, she thought the pepper was a bit overpowering. Then she tried the roasted strawberries as a topping on vanilla ice cream and claims it was “amazing.”
Directions for this strawberry recipe call for mixing up berries with balsamic vinegar, black pepper and your favorite natural sweetener. Let it all sit in the fridge to give the flavors a chance to meld. Then put it in the oven at 375 until your strawberries are hot, but not mushy. Serve it up immediately – especially if you’ve got vanilla bean ice cream in the freezer!

5. Strawberry Balsamic Chicken
Strawberries can be incorporated into your main meal, too. My family makes a lot of chicken breasts for dinner. Sometimes we get a little bored with the same combinations and flavors. This is a fun way to switch things up.
Ali, from the website Gimme Some Oven, shows us how to make Strawberry Balsamic Chicken. By now you may have noticed that balsamic vinegar and balsamic reductions are common ingredients in strawberry recipes.
Ali keeps the chicken prep pretty simple, which is often the best way to go. She marinates the breasts in balsamic vinegar and seasons with salt and pepper before baking – or you can grill the chicken if you prefer.
What makes this dish unique is the strawberry caprese salsa with fresh basil and mozzarella, which tops the chicken. Finally, the reduced balsamic gets drizzled over everything.
So fresh. So healthy. So good.

6. Strawberry Sangria Popsicles
Yes, it is basically an alcoholic popsicle with strawberry slices inside of it. Make them right and these summer spirits on a stick will look just as awesome as they taste.
In case you need to know, sangria is a mix of chilled wine and brandy that also includes some fresh fruit. However, you can get creative and use whatever boozy mix you like (in moderation, of course).
Beth Branch shared her drunken popsicle recipe on the blog Literally Darling. She simply uses pink moscato without any brandy. Beth also adds fresh lemon juice and pureed strawberries.
You’ll have to keep these fun-looking popsicles away from the children. But for a kid-friendly version, just use lemonade for your liquid.
