This year, why not try something tasty and fun with all those leftovers! No need to search any further, we’ve rounded-up some delicious recipes from food bloggers across the web, to help you use up all of your extra turkey, stuffing, squash, cranberry sauce and mashed potatoes.

Be thankful and excited to have leftovers this Thanksgiving. Because who knows – you just might get a whole weeks worth of meals out of it!

Here are eight delicious Thanksgiving leftover recipes to try…

1. Thanksgiving Leftover Pumpkin Gnocchi

If you have leftover squash or pumpkin puree you can use it to try this super quick and easy pumpkin gnocchi with toasted pecans. The recipe calls for just eight simple and healthy ingredients.

Better yet, it’s also vegan and gluten-free!

Whipping it up will only take you 10 minutes, but recipe creator, Michelle from Peachy Palate says to eat them just after they were made. But if you like to be prepared, you can make a batch and refrigerate it until you’re ready to eat.

You can top this gnocchi off with a healthy marinara sauce, or Michelle suggests topping it with some leftover cranberry sauce if you have it. But it already has delicious toasted pecans.

2.Thanksgiving Leftover Turkey Pot Pie

Recipe creator, Chungah from Damn Delicious says this turkey pot pie will make you want to skip over Thanksgiving and head right to the leftovers! Plus, it’s pretty simple and will help you get rid of two cups of leftover turkey!

The recipe is fairly healthy as it is, but it’s easy to make a few substitutions to suit your health needs. For instance, you could use almond milk instead of cow’s milk, ghee instead of butter, and 1 Tbsp ground flax seed + 3 Tbsp water instead of an egg.

This is truly comfort food at its best. Enjoy!

3.Thanksgiving Leftover Turkey Root Vegetable Soup

Soup is the perfect way to use up your leftover turkey, bones and drippings in the bottom of the pan! And if you’re all turkey-d out, you can still make the soup and freeze it to have sometime in the new year instead.

Julia, creator of the Roasted Root, tells us just how healthy those turkey drippings are. The fat actually helps us absorb the nutrients from all the vegetables. The gelatin from the turkey bones have super health benefits and it makes the soup taste so delicious.

Use your leftover roasted carrots or sweet potatoes if you have them, or chop some fresh veggies. Either way, this soup is pretty easy to make!

4. Thanksgiving Leftover Nachos

This awesome recipe from Girl Versus Dough will have you using up your leftover turkey… But you’ll also get to use up your extra cranberry sauce when you make the cranberry jalapeno salsa on the side!

It also combines fresh chopped cilantro, green onions and lime juice – ubber healthy and mmm-mmm good.

Seriously, this recipe is a real no brainer . It’s easy. It’s quick. It’s delicious. Give it a try!

5. Thanksgiving Leftover Cranberry Sauce Bread

Everyone needs a light breakfast after a huge Thanksgiving feast! Use up your cranberry sauce in this simple bread recipe from Oh My Veggies. The only rule is, the cranberry sauce has to be the chunky homemade kind and not that gross stuff in the can!

This recipe is also dairy-free! No eggs whatsoever. Instead you’ll use flax seed which is the perfect egg substitute when you mix it with a bit of water.

In the end you’ll have 3 mini loafs – so you could even share if you feel like it!

6. Thanksgiving Leftover Stuffing Stuffed Mushrooms

This is one of my favorite Thanksgiving leftover ideas! All you need is your leftover stuffing, some large mushrooms, two kinds of cheese, olive oil and a little butter.

Just bake them for 10 minutes and you’re done! The hardest thing about this recipe is making the stuffing, and by this time you’ll already have done that!

7. Thanksgiving Leftover Mashed Potato Crusted Quiche

The Teacher Chef, Rachael, gives us this awesome breakfast idea to do with our leftover mashed potatoes… A mashed potato crusted quiche! I didn’t even know you could do something so clever. What a nice alternative to a regular pie crust. A bit healthier I’d say.

You can make this quiche crust the night before and mix up your eggs and veggies in a separate dish. Then bake it in the morning and gobble it up before all that Black Friday shopping.

8. Thanksgiving Leftover Crockpot Turkey Chili

This has got to be one of the easiest recipes of our Thanksgiving leftover round-up. Probably because you throw everything into a crock pot with your leftover turkey and let it cook for 4-6 hours on high.

Passion for Savings suggests serving it up with chips, sour cream, onions and cheese. And don’t forget some jalapenos if you like a little kick!

These recipes might have you more excited for the leftovers than the Thanksgiving feast itself!

Well, that might be a stretch, but at least it gives you something tasty to look forward too after all that hard work.
